Wild Waterbeach Weisse - Weisse - 3.5% - 375ml
This wild variation of Pastore's berliner weisse series takes things closer to the historic berliner weisses of old.
An unhopped base beer of 60% pils malt and 40% wheat was primary fermented with Hornindal Kviek & Lactobacillus before moving to a new tank and pitching brettanomyces claussenii. The beer was left to secoundary ferment with the wild yeast for six months before bottling and bottle conditioning for two months.
Brett. Claussenii is known for its fruity ester forward fermentation profile. It brings an abundance of apple and pear to the beer as well as some hay and farmhouse notes.
The beer is very acidic with some acetic contribution from the brett secoundary. It is delicate, spritzy, dry and delightfully fresh.
